Sugarcane first arrived in Hawai'i with the ancient Polynesian voyagers. Commercial sugar production in Hawai'i was first established in the town of Kōloa in 1835 — making Kaua'i's Kōloa the birthplace of Hawai'i's sugar industry. When the first harvest came in by 1837, local legend holds that rum production began quietly alongside it. Kōloa Rum Company carries that legacy forward as the island's first licensed distillery, founded in 2009, distilling all its rums on-site in Kalaheo from pure cane sugar and volcanic mountain water.

Every Kōloa rum begins with the same foundation: pure cane sugar and water filtered through the volcanic strata of Mount Wai'ale'ale — one of the wettest places on earth — then twice-distilled in a vintage 1,210-gallon steam-powered copper pot still. The Coconut expression layers natural coconut character onto that base, producing a coconut rum built on genuine double-distilled Hawaiian cane spirit rather than the neutral grain spirit base common to many coconut rums. The result is drier and more complex than typical coconut liqueurs.
