Empirical The Plum, I Suppose is an experimental flavor-forward spirit from Empirical, the Copenhagen flavor company founded by Lars Williams and Mark Emil Hermansen — built on the balance between bitter plum-stone kernels, which lend a marzipan and bitter-almond character, and distilled marigold kombucha, which adds floral, tannic notes reminiscent of plum skins.

Empirical is not a conventional distillery: it approaches spirits the way a kitchen approaches flavor, drawing on its founders' Noma background. The Plum, I Suppose layers two contrasting components — the foundation comes from the kernel inside plum stones, giving a nutty, marzipan-like bitterness, while distilled marigold kombucha contributes a floral lift and gentle tannin that echoes the skin of the fruit. The result is a low-intervention, aromatic spirit best explored on its own terms rather than treated as a classic juniper gin.

Frequently Asked Questions

What is The Plum, I Suppose?

An experimental spirit from Empirical built on bitter plum-stone kernels (marzipan, bitter-almond character) balanced with distilled marigold kombucha for floral, tannic notes reminiscent of plum skins.

Is it a traditional gin?

No — Empirical makes flavor-forward, low-intervention spirits rather than classic juniper-led gin. It's best appreciated on its own terms.

How should I serve it?

Lovely chilled and neat, or over ice; its delicate aromatics are easily overwhelmed, so keep any mixer minimal.
