Del Maguey Minero Mezcal Tequila

Del Maguey Minero is the clay still expression from Santa Catarina Minas — the only mezcal in the Del Maguey portfolio distilled in an ancient clay still with bamboo tubing rather than copper pot stills, producing the floral, fruity, and honey-forward character that the clay still specifically imparts and that copper distillation cannot replicate.

Santa Catarina Minas sits one hour beyond Chichicapa through a mountain pass in an arid semi-tropical microclimate. Florencio Carlos Sarmiento and his sons operate the most organized and methodical palenque Del Maguey works with — including a cistern system to cool and recycle distillation water. The clay still is the defining element: where copper conducts heat efficiently and strips certain compounds, clay conducts heat more gently, allowing different flavor compounds to carry through, producing the flower essence, vanilla, fig, and burnt honey character that defines Minero. Deep, warm, and sweet all the way to the finish.
