Ron Zacapa Centenario Sistema Solera 23 Rum. Ron Zacapa, Quetzaltenango, Guatemala — produced in the Guatemalan highlands at 2,300 meters elevation from virgin sugar cane honey (not molasses) using a Sistema Solera fractional blending system with rums aged 6 to 23 years, winning a Platinum medal and First Place from the Beverage Testing Institute with 97 points — one of the most decorated rums in the world.

Ron Zacapa is made at the ingenio Tulula facility in the Zacapa region of Guatemala's Andes highlands, where the cool high-altitude climate slows the aging process and allows for more subtle, controlled spirit development than hot, low-altitude Caribbean environments produce. Master Rum Maker Lorena Vasquez oversees the blending at the Fraijanes plateau, where the aging warehouses sit at 2,300 meters — the source of the brand's "aged above the clouds" positioning.

The crucial production distinction: Zacapa uses virgin sugar cane honey rather than molasses as its fermentation base. Sugar cane honey is the concentrated first pressing of fresh cane juice before any sucrose is removed — it retains more of the plant's natural flavor compounds, particularly esters and higher alcohols, producing a richer, more complex base spirit than molasses fermentation. The Sistema Solera then layers rums from 6 to 23 years of aging through continuous fractional blending, achieving the integration and layered complexity that makes Zacapa consistently win at blind competitions.

  • Nose: Honey, caramel, dark chocolate, dried fruit, orange peel, and vanilla. The highland aging creates a more delicate, refined aromatic profile than hot-climate Caribbean rums.
  • Palate: Rich and smooth. Caramel, honey, chocolate, dried fig, and warm spice. The virgin sugar cane honey base creates a natural sweetness that differs from post-fermentation dosage — the richness is inherent to the distillate.
  • Finish: Very long with chocolate, caramel, and spice persisting well past the close. One of the longest finishes in any rum at this price point.

Zacapa 23 (6–23 years) is more accessible and dessert-like; XO is the collector's expression with extended aging influence.
