Panama Pacific applies a consistent philosophy across its entire range: freshly distilled sugarcane rum from Ingenio San Carlos's Coffey copper column stills (run at slightly lower proof than industry standard for richer character) starts in ex-bourbon casks, then finishes in toasted Tennessee and Canadian rye whiskey barrels. What distinguishes this approach from most rum aging programs is the deliberate use of exhausted, toasted casks rather than freshly charred ones. Toasting caramelizes the wood sugars without creating the heavy char layer of bourbon barrels, allowing a gentle, integrated imparting of vanilla, caramel, and butterscotch notes that complement rather than dominate the rum's inherent cane character.

At 15 years — the middle expression in the range between the 9 Year and the 23 Year pinnacle — the rum achieves significant dessert-like depth. Twelve years in depleted rye casks draws out flavor slowly and gently, creating a profile that showcases the cane spirit's evolution without the aggressive wood extraction of fresh barrels.
