Hillrock 5 Year Old Double Cask Bottled-in-Bond is a 100-proof Bottled-in-Bond bourbon from Hillrock Estate Distillery in New York's Hudson Valley — a field-to-glass producer growing its own grain and operating an on-site malt house, here meeting the strict federal Bottled-in-Bond standard: the product of one distillation season, one distiller, aged at least four years in a federally bonded warehouse, and bottled at exactly 100 proof.

Hillrock Estate Distillery in Ancram is one of the few American whiskey producers operating at full estate scale, growing grain on its own land and malting in-house. This Double Cask expression is aged a minimum of five years and carries the Bottled-in-Bond designation — a 19th-century mark of authenticity guaranteeing a single distillery, a single season, and bottling at 100 proof with no blending across producers.

Tasting Notes

  • Nose: Caramel, vanilla, and toasted oak with a grain-forward Hudson Valley character.
  • Palate: Full and structured at 100 proof — baking spice, brown sugar, and oak.

Frequently Asked Questions

A federal standard requiring the whiskey to be the product of one distillation season and one distiller at a single distillery, aged at least four years in a bonded warehouse, and bottled at exactly 100 proof — a guarantee of authenticity.

Does Hillrock grow its own grain?

Yes — Hillrock is a field-to-glass distillery, growing grain on its own Hudson Valley estate and operating an on-site malt house.

What is the Double Cask designation?

It refers to Hillrock's use of multiple cask types in maturing this bourbon, building added depth before bottling at the Bottled-in-Bond standard of 100 proof.
