Don Mateo de la Sierra Silvestre is a traditional Mexican wild-agave mezcal from Don Mateo de la Sierra in Michoacán, Mexico — made from a Silvestre (wild) agave variety, capturing the most untamed end of the Michoacano agave-spirits tradition. Rich and smoky in the classic palenque style.

Michoacán is one of the seven Mexican states with formal Denominación de Origen status for mezcal production. The Silvestre designation refers to mezcals produced from wild, uncultivated agave varieties harvested in the mountains — typically rarer and slower-maturing than cultivated species.
