Caol Ila Distillery at Port Askaig, Islay is Diageo’s most productive Islay distillery and produces a characteristically lighter-bodied Islay peat smoke style compared to the south coast distilleries. The 2024 Special Release’s short fermentation and cloudy wort approach creates heavier, more intense and different congener compounds than standard production — short fermentations produce more sulphury and meaty character before later development, while cloudy worts increase the oils and proteins extracted from the malt for a fuller, heavier spirit.
