12 years. Triple European Cask Finish. Old World. WhistlePig — WhistlePig’s exploration of European wine cask finishing applied to 12-year-aged Vermont rye, using three distinct cask types — Madeira, Sauternes, and port — to add layers of dried fruit, honey, and wine character over the rye grain base.

WhistlePig’s farm in Shoreham, Vermont has built its reputation on sourcing and finishing exceptional rye whiskey. The Old World series takes the Vermont finishing philosophy furthest into European wine territory — a direct dialogue between American grain spirit and the Old World wine traditions of Portugal, France, and the Atlantic islands.

The Madeira cask adds oxidative dried fruit richness; the Sauternes cask contributes honey, apricot, and botrytis character; the port cask brings dried cherry and tannin. Together they transform the 12-year rye base into something more complex and wine-influenced than any single finish could produce.

Frequently Asked Questions

  • What is the Old World series within the WhistlePig lineup? The Old World 12 Year sits above the standard 10 Year and below the 15 Year in the WhistlePig age hierarchy, distinguished by the European cask finishing program that the standard and 15-year expressions don’t use.
  • How do the three cask types interact? Madeira adds oxidative dried fruit and nuttiness; Sauternes adds honey and botrytis stone fruit; port adds dried cherry and wine tannin. The triple finish creates layered complexity without any single wine character dominating the rye base.
