Hemingway Rum Company, Key West, Florida — a limited expression of Papa's Pilar Dark that extends the standard solera-blended base with a final maturation in Spanish Oloroso sherry casks, adding pronounced dried fruit, raisin, toffee, and walnut notes on top of the signature bourbon and port wine cask foundation. Papa's Pilar Spanish Sherry Cask begins with the same multi-source foundation as the standard Dark expression: rums hand-selected from Barbados, the Dominican Republic, Panama, Venezuela, and Florida, solera-blended first in bourbon barrels and port wine casks. Where the standard Dark stops there, the Sherry Cask extends the journey with a final maturation in Spanish Oloroso sherry barrels — an oxidatively aged fortified wine cask that imparts pronounced dried fruit character, walnut shell, raisin, and a savoury oxidative complexity that the bourbon and port casks alone cannot achieve.

Oloroso sherry casks are among the most flavor-active finishing vessels in the spirits world, used extensively in Scotch whisky and increasingly in premium rum. The high residual sugar and tannin content of former Oloroso barrels creates a finish that goes beyond sweetness — it adds structure, dried fruit depth, and a distinctive nut-and-leather character that pairs exceptionally with the Caribbean rum base. The result is a Papa's Pilar expression that bridges the worlds of Caribbean rum and sherry-cask whisky in a way that rewards both rum and whisky drinkers equally.
