The 2021 Parker’s Heritage Collection 15th Edition 11 Year Heavy Char Wheat Whiskey is an exceptionally limited Kentucky straight wheat whiskey from Heaven Hill Distillery.
Aged for 11 years and bottled at 122 proof (61% ABV) without chill filtration, this highly collectible release represents the third installment in Heaven Hill’s celebrated Heavy Char series, following the 2019 Heavy Char Rye and 2020 Heavy Char Bourbon.
Released in September 2021, this expression showcases the remarkable influence of extended maturation in specially crafted Level 5 heavily charred oak barrels.
Aged 11 Years in Level 5 Heavy Char Barrels
For this extraordinary release, Heaven Hill selected just 75 barrels, each subjected to an intense 90-second Level 5 char, compared to the distillery’s traditional 40-second Level 3 char.
The whiskey matured for 11 years on the sixth floor of Rickhouse Y, allowing the wheat-forward mash bill to develop extraordinary depth, richness, and complexity.
The mash bill consists of:
- 51% Wheat
- 37% Corn
- 12% Malted Barley
The extended barrel charring creates deeper interaction between the whiskey and oak, developing layers of caramelized sugars, honey, toasted wood, and warm baking spices.

Nose: Honey, soft oak, warm vanilla, and subtle cinnamon and nutmeg spices.
