Sherry-cask-finished Calvados produced by seventh-generation producer Jean-Francois Guillouet in Caligny, Suisse-Normand, under the AOC appellation. Distilled from a 100% apple must that was fermented for 9-12 months and distilled on a travelling wood-fired copper column still. The French oak aged Calvados is finished for a further 2 years in Sherry casks and in the cellars of French whisky producer Michel Couvreur, in Bouze-les-Beaune, Burgundy.
