After beginning maturation in traditional Kentucky warehouses, selected barrels are transferred to the distillery's limestone cellar at Star Hill Farm, held around 50°F. The cooler cellar slows oak extraction while allowing continued oxidation, preserving the fruit, sweetness, and soft texture of the Maker's wheated profile while developing richness and complexity without excessive bitterness.
