A few dashes transform a spirit-forward cocktail the way salt transforms food: they add depth and integration without making the drink taste like any one ingredient. Aromatic bitters are the foundation (Angostura in an Old Fashioned or Manhattan); flavored bitters are directional (orange bitters in a Martini, chocolate bitters in a mezcal Negroni).

Does tonic water brand matter for a Gin & Tonic?

Significantly. Standard grocery tonic uses high-fructose corn syrup or artificial sweeteners and quinine derived from synthetic sources, producing a flat, bitter, slightly chemical finish.
