Umami Bitters is a Japanese craft cocktail bitter built around kelp (kombu), shiitake mushroom, dried bonito (katsuobushi), and yuzu — a quartet of the ingredients that define umami in Japanese cuisine. Distinctly savory rather than sweet, this bitter adds the fifth-taste depth of glutamates and inosinates to cocktails, working particularly well in tomato- or beef-broth-adjacent drinks (Bloody Mary, Bullshot) or where a Martini benefits from oceanic depth.

Umami bitters are a relatively rare category specifically because they require a complete recasting of what cocktail bitters typically do — instead of adding aromatic or bittering complexity, this adds savory, dashi-adjacent depth that bridges drinks closer to food.
