Kavalan was founded in 2005 in the Yilan County of northeastern Taiwan, in the foothills of the Snow Mountain range. The distillery draws water from the mountain snowmelt and operates in a hot, humid climate where the angels' share (evaporative loss) runs at 12–15% annually — three to four times the Scottish rate. The accelerated maturation means Kavalan's 5–7-year-old whisky can carry the complexity that takes Scottish distilleries 12–18 years to achieve.

The Sherry Oak uses the same first-fill sherry casks normally reserved for Kavalan's cask strength releases, diluted to a standard ABV with the distillery's mountain spring water.
