Silent Pool Gin. Silent Pool Distillers, Albury Estate, Surrey Hills, England — an award-winning Surrey gin built on 24 botanicals including locally foraged chamomile, elderflower, lavender, rose petals, and honey from the estate's own beehives, distilled in a four-stage process using spring water drawn from the legendary Silent Pool.

Silent Pool Distillers was established on the Albury Estate in the Surrey Hills — an Area of Outstanding Natural Beauty managed by the Duke of Northumberland, who accepts payment partly in gin. The distillery is named for the nearby Silent Pool, a mysterious spring-fed lake of striking clarity whose cold spring water is used in every bottle. The 24 botanicals are drawn from both local sources and international provenance, and the recipe development was driven by a desire to tell the story of the place through the gin's flavor profile.

What sets Silent Pool apart is its four-stage botanical integration process. Classic botanicals including Bosnian juniper, liquorice, cassia bark, orris, and bergamot are bruised and macerated in base spirit before distillation. A gin basket hanging in the neck of the Holstein still holds fresh orange and lime peel, dried pears, Macedonian juniper, and Polish angelica, contributing bright aromatics and citrus lift. The most delicate botanicals — rose petals, kaffir lime leaves, linden flowers, and elderflower — undergo a separate high-strength maceration called the Gin Tea Infusion. Finally, locally sourced honey from the neighbouring vineyard's beehives is added, contributing both viscosity and a distinctive sweetness that rounds and softens the final spirit. The result is distilled to approximately 90% ABV, then brought to bottle strength with Silent Pool spring water.

  • Nose: Violet, lavender, and lime leaf bring floral aromatics, while cardamom and juniper add a spicy edge. Elderflower, chamomile, and a waft of orange blossom. Pine, eucalyptus, and kaffir lime weave through rich citrus and faint lavender.
  • Palate: Juniper leads, then sweet pear-like fruit appears alongside soft honey sweetness. Floral notes of rose and lavender grow through the mid-palate. Chamomile, elderflower, black pepper spice, and bright kaffir lime citrus develop alongside earthy, rooty depth.
  • Finish: Lengthy, warming, and complex. Vanilla-rich honey notes linger longest alongside lavender and some floral tones. The spices — cardamom, cassia, cubeb — provide a contemplative, thought-provoking finale.
