Two years in new French white oak is significantly longer than the legal Añejo minimum of one year, and the use of new barrels — rather than previously used barrels — produces a more assertive oak character than most standard añejos. Why does Casa Noble use new French white oak for aging?

New French white oak — never previously used — imparts the most assertive and complex wood character of any cooperage choice. French oak has a tighter grain than American oak and contributes spice, dried fruit, and elegant structure rather than the vanilla and coconut of American oak. Using new barrels (rather than previously used) ensures maximum wood extraction, producing more complexity per year of aging than reused barrels would achieve.
