Four Pillars Olive Leaf Gin. Four Pillars Distillery, Yarra Valley, Victoria, Australia — a savory, textural gin built from three types of cold-pressed extra virgin olive oil and olive leaf tea sourced from Cobram Estate, one of Australia's premier olive growers.

The idea for Olive Leaf Gin traces back to 2015, when Four Pillars collaborated with Santamanía Destileria Urbana in Madrid on a small run called Cousin Vera's Gin — their first experiment with savory, olive-forward gin flavors. The spirit came and went quickly but confirmed the direction. After visiting Cobram Estate in Boundary Bend during olive harvest, the Four Pillars team realized that olive oil itself could be a botanical. What followed was a full year of trials before the recipe was finalized. The gin uses three types of cold-pressed extra virgin olive oil — from the Picual, Hojiblanca, and Coratina varieties — plus olive leaf tea harvested alongside the olives at Cobram Estate, which provides herbaceous green tea-like notes and light tannin.

Additional botanicals include rosemary and bay leaf from co-founder Cameron MacKenzie's own garden, native Australian macadamia nuts and lemon myrtle, fresh local lemons, and juniper. The result is a gin that Wine Enthusiast scored 92 points, calling it a "cool, lightly mentholated" savory gin with rosemary, green olive, saline, and a zippy juniper finish. Four Pillars describes it as their antidote to citrusy gins — built for Martinis and Gibsons above all else.

Tasting Notes

  • Nose: Herbaceous and savory — rosemary and bay leaf open with earthy juniper and the softly vegetal richness of olive. Creamy macadamia nuttiness and a touch of bright lemon emerge as it opens.
  • Palate: Rich, silky texture from the olive oil. Savory and umami-driven with green olive notes, rosemary, sage, and pricklings of coriander and black pepper. Juniper adds spice and structure. Subtle tannic undertone from the olive leaf tea. Very restrained citrus.
  • Finish: Clean, mentholated, and saline with a zippy juniper close. Long and bright, inviting another sip.

  • What does Four Pillars Olive Leaf Gin taste like? Savory and herbaceous on the nose with rosemary, bay, olive, and creamy macadamia. The palate is rich and silky with green olive, sage, coriander, and black pepper. The finish is clean, mentholated, and saline with a bright juniper close. 92 points Wine Enthusiast.
  • How is olive oil used in gin? Four Pillars uses three types of cold-pressed extra virgin olive oil as botanicals in the still, alongside olive leaf tea. The oil contributes a luxurious silky texture and subtle olive flavor that no other botanical can replicate.
  • What makes Olive Leaf Gin different from Rare Dry Gin? Rare Dry is citrus-forward and spiced with Asian botanicals. Olive Leaf is savory and textural — built around Mediterranean herbs and Australian olive rather than citrus. They're designed for different drinking occasions.
  • What cocktails is Four Pillars Olive Leaf Gin best in? Purpose-built for Martinis and Gibsons, where its savory, olive-forward character replaces the need for dirty brine. Also excellent in a G&T garnished with fresh rosemary and lemon.
