The first release in Angel's Envy's Cellar Collection — Kentucky straight bourbon finished in Oloroso sherry casks, from the distillery that built its name on secondary maturation.

Angel's Envy has finished bourbon in port casks since the beginning; the Cellar Collection is where the distillery works with cask types outside that core. Volume 01 uses Oloroso sherry, the dry, oxidatively aged style of sherry whose casks contribute dried fruit, nuts and a savoury depth rather than the sweetness a Pedro Ximénez cask would bring.

The effect sits on top of the bourbon rather than replacing it — caramel and oak underneath, with raisin, toasted nut and baking spice layered over. It's the most European-feeling expression the distillery makes.
