Cognac Ferrand / Maison Ferrand, Jamaica — a single-vintage 2005 Jamaican rum highlighting the ancestral Jamaican style through long fermentation and 100% pot still distillation from the Long Pond and Clarendon distilleries, aged 12 years in Jamaica and 1–2 years in France in ex-cognac casks, developing banana, prune, roasting coffee, and raisin depth elevated by spices into a rare and distinguished spirit.

The 2005 vintage is the more assertive and complex of Plantation's two readily available Jamaica single-vintage expressions. Distilled in 2005 from Long Pond and Clarendon — two of Jamaica's most historically significant pot still operations — the rum spent a full twelve years aging in Jamaica before traveling to Chateau de Bonbonnet in Cognac for 1–2 additional years in former cognac casks. That extended tropical aging drives significant ester development: the specific fermentation conditions, dunder pit practices, and heat at Long Pond and Clarendon over twelve Jamaican summers create depth that shorter-aged Jamaica vintages cannot achieve.

Plantation describes this expression as highlighting the "ancestral Jamaican style" — a reference to the long fermentation and 100% pot still distillation that defined Jamaican rum's global reputation in the 18th and 19th centuries. No column still contribution, no shortcut to lightness. The resulting rum has the full weight, funk, and complexity of traditional Jamaican pot still production refined by the Plantation cognac cask process.
