El Dorado 12 Year Old Special Reserve Demerara Rum. Demerara Distillers Limited, Diamond Distillery, Guyana — the benchmark Demerara rum, blended from three historically irreplaceable stills — including the only functional greenheart wood Coffey still in the world, built in 1880 — aged a minimum of 12 years in ex-bourbon barrels at the last remaining rum distillery in Guyana.

At its peak, Guyana was home to over 300 sugar estates with their own distilleries. Over centuries of consolidation those 300 were whittled down to one: Diamond Distillery on the east bank of the Demerara River, operated by Demerara Distillers Limited. When each estate closed, DDL rescued their stills rather than letting them be scrapped — preserving them because no modern equipment replicates what they produce. Diamond Distillery now houses eight distinct stills, including the Port Mourant double wooden pot still from 1732 and the Enmore Coffey still — the only functional greenheart wood Coffey still in the world, built in 1880.

El Dorado 12 is a blend of distillates from three still types: the Port Mourant wooden pot still (heavy, funky, complex esters), the Enmore wooden Coffey still (lighter but distinctly woody and herbaceous — unreplicable by metal), and the Diamond Coffey still (cleaner, rounded base). All are aged a minimum of 12 years in ex-bourbon American oak barrels in Guyana's tropical climate, where accelerated evaporation means 12 Guyanese years carry significantly more maturation than the same period in cooler climates. Tasting Notes

  • Nose: Lush tropical fruit and spice — banana, raisin, honey, and dark sugar lead. Deeper notes of marzipan, cherry, cinnamon, and dry herbs. Oak and toffee underneath.
  • Palate: Round, mellow, and full-bodied. Baked apple, dried date, clove, and oak tannin. Rich fruits and spice with a buttery mouthfeel and hints of chocolate. The wooden stills deliver a funky complexity no modern column still can replicate.
  • Finish: Delightful, elegant, and dry. Ripe papaya, warm spice, and a lingering toffee note. Long and smooth.
