Mount Pelée is an active stratovolcano at the northernmost tip of Martinique — one of the most geologically active points in the Caribbean. The volcanic soil surrounding the J.M estate at Macouba is rich in minerals and trace elements from millennia of volcanic activity, and it produces sugarcane with a more pronounced mineral, earthy, and intensely aromatic character than the clay and limestone soils found in other Martinique growing zones. This is the terroir argument for Rhum Agricole that parallels wine: just as volcanic soil in Santorini or the Canary Islands produces Assyrtiko and Listán Negro with distinctive mineral intensity, volcanic Martinique soil produces sugarcane with flavor characteristics not found in flat alluvial or limestone growing areas. What is Élevé Sous Bois and how does it differ from the full VSOP and XO aged expressions?

Élevé Sous Bois translates literally as “raised under wood” — a short aging period of around 12 months in ex-bourbon barrels. Under AOC Martinique rules, it doesn’t qualify as VSOP (which requires 3 years minimum) but it does receive enough wood contact to develop subtle vanilla, caramel, and light spice on top of the raw agricultural sugarcane character. The result is a bridge expression between the full freshness of the Blanc and the more developed wood integration of the VO and XO: the fresh grassy and tropical fruit character of the Agricole base is still prominent, but softened by wood contact without the barrel’s full tannin and dried fruit contribution. VSOP and XO carry significantly more wood integration — the VO at 3+ years develops stone fruit and vanilla; the XO at 6+ years produces the full complexity of toasted nuts, mango, white pepper, and cinnamon that defines aged Agricole at its best.
