Frequently Asked Questions

What does Canadian cold-warehouse aging contribute to the Rare Perfection 14 and 15 Year?

Aging climate is one of the most significant variables in whiskey maturation. Kentucky rickhouses experience dramatic temperature swings — sub-freezing winters and 100°F+ summers — that cycle the spirit rapidly in and out of the barrel wood, driving fast extraction of vanilla, caramel, and oak compounds. Canadian warehouses in the colder prairie climate experience much smaller seasonal temperature ranges and lower peak temperatures, which produces a slower, more gradual maturation. The result is a different flavor profile at the same age: cold-climate aged whiskey tends toward more delicate, refined, and integrated flavors — less aggressive oak tannin, more subtle dried fruit and spice — than comparable-age Kentucky bourbon. The Rare Perfection 14 and 15 Year expressions benefit from this slower development, producing depth and complexity without the heavy wood influence that Kentucky aging can impart at similar age statements.

How does Rare Perfection differ from Very Olde St. Nick within the Preservation Distillery family?

Both come from the Preservation Distillery family in Bardstown, Kentucky and share the ultra-aged, small-batch philosophy. The key difference is source and style. Rare Perfection sources aged Canadian whiskey — a fundamentally different production tradition, using multi-grain blended whisky from the Canadian prairies aged in a cold-climate environment. Very Olde St. Nick sources primarily from Kentucky bourbon barrels, including the Ancient Cask series (15–20+ years of Kentucky rickhouse aging). The two series represent different expressions of the same philosophy — patience and aged spirit over volume — but the Canadian cold-climate character of Rare Perfection produces a distinctly different drinking experience from the bold, Kentucky-aged character of Very Olde St. Nick.
