PUNI is Italy’s first whisky distillery, established in 2010 in Glurns, South Tyrol — near the Puni River in the Alps, close to the Austrian and Swiss borders. PUNI produces triple-grain malt whisky from locally grown rye, malted barley, and wheat, matured in diverse cask types including ex-bourbon, Sherry, Marsala, and ex-Islay peated casks, producing distinctly Italian expressions with Alpine character.

South Tyrol is an Alpine region at the northern tip of Italy — culturally and geographically closer to Austria than to central Italy, with a Continental mountain climate of cold winters, warm summers, and significant diurnal temperature variation. This climate is materially different from the aging environments of Scotland (cool and damp), Ireland (mild and maritime), Kentucky (dramatically hot and humid summers), or Japan (varies by region). The Alpine temperature swings cycle the whisky in and out of the barrel wood repeatedly across seasons, accelerating extraction of vanilla, caramel, and oak compounds in summer and slowing it in winter. The local grain — rye, barley, and wheat grown in the Alpine foothills — produces a different distillate base than Scottish or Irish single malt produced from maritime lowland barley. The combination of Alpine terroir and Italy’s traditional relationship with barrel-aged spirits (Grappa, Barolo, Amarone) influences both the production philosophy and the cask selection program.
Marsala is a Sicilian fortified wine — produced from white and red grape varieties in western Sicily and fortified with grape spirit to between 17–22% ABV. Marsala casks are extraordinarily rare in whisky maturation: unlike ex-Bourbon, ex-Sherry, or ex-Port casks, which have established markets in the Scotch whisky industry, Marsala casks have almost no history as whisky aging vessels outside of PUNI. The Marsala wine that previously saturated these barrels is rich in dried fruit (raisin, fig, apricot), caramel, and oxidative nutty character — closer to a fortified wine than a table wine, meaning the cask has been more deeply flavored than a standard wine barrel. PUNI uses this as a distinctly Italian influence on the spirit: the Marsala finish adds complexity and sweetness that references Italian wine culture without replicating anything in Scotch or Irish whisky’s established cask vocabulary.
