Most American whiskey brands, even respected ones, involve some separation between grain sourcing, mashing, fermentation, distillation, aging, and bottling — whether that’s sourcing distillate from MGP or another large distillery, or contracting out aging warehouses. Peerless controls the entire production chain at its Louisville facility: grain delivery, mashing, fermentation, distillation in their copper pot stills, aging in rickhouses at the property, and bottling. This matters for quality control and traceability — every decision that affects the final product is made in-house by the same team. It also means there is no outsourced distillate in any Peerless release, which distinguishes it from many craft whiskey brands that claim independent identity while sourcing from large commercial operations.

Why does Peerless release at barrel strength rather than proofing down to a standard ABV?

Barrel strength release (typically 107–120+ proof for Peerless) means the whiskey is bottled directly from the barrel without water addition to hit a target proof. This approach preserves the full concentration of flavor and texture that the barrel produced over the aging period — diluting to a standard 80 or 90 proof strips out some of the aromatic compounds and mouthfeel that make barrel strength expressions distinctive. Combined with non-chill filtration (which retains the fatty acids and proteins that standard filtration removes), Peerless barrel strength releases offer the most complete expression of the distillery’s aging program. The higher proof also means the consumer can control their own dilution by adding water to taste, rather than having the distillery dilute to a universal standard.
