Mortlach was the first legal distillery in Dufftown, established in 1823, and is renowned for its unique 2.81 distillation process using six stills of varying shapes and sizes — producing a rich, meaty, complex Speyside single malt known as “The Beast of Dufftown.” Core expressions include 12 Year “The Wee Witchie” (ex-bourbon and sherry casks), 16 Year “Distiller’s Dram” (sherry matured, dark chocolate and dried fruit), 20 Year “Cowie’s Blue Seal,” and the rare 30 Year “Midnight Malt.”

What is the Mortlach 2.81 distillation process?

Most Scotch distilleries distill their spirit twice — wash still to low wines still — in matched pairs of pot stills. Mortlach uses six stills of three different sizes and shapes, running spirit through a complex routing where portions of the spirit make additional partial distillation passes through a small spirit still before the final cut. The cumulative effect is that the spirit is distilled the equivalent of 2.81 times rather than the standard 2 times. The additional partial distillations in the small still increase the spirit’s weight and richness — more congeners, more ester complexity, more of the sulfurous, meaty character that Mortlach is known for. No other Speyside distillery replicates this process, which is why Mortlach tastes more like a Highlander than most of its Speyside neighbors.
