A spirit is a distilled alcohol without added sweetener — vodka, gin, whiskey, rum, and tequila are all spirits. A liqueur is a spirit with added sugar (minimum sweetness levels vary by country and style) plus flavoring from fruits, herbs, spices, cream, or other sources. The added sugar is what makes a liqueur a liqueur: amaretto, Cointreau, Baileys, Campari, and Chartreuse are all liqueurs despite very different flavor profiles and ABV levels. Some liqueurs are made from a single base spirit with one dominant flavoring; others — like Chartreuse — are complex blends of dozens of botanicals.
In the United States, “cordial” and “liqueur” are used interchangeably on bottle labels and in bars. Outside the US, “cordial” can refer to a non-alcoholic fruit syrup (diluted with water to drink).
