Most reposados use new or once-used American oak barrels at relatively standard aging periods (2–6 months). La Gritona ages for 8 months — longer than many reposados — in reused American whiskey barrels that have already given much of their vanilla and caramel to a previous fill. The result is a reposado that picks up oak structure and integration time without being dominated by sweet vanilla character, allowing the Highlands agave’s natural bold, fruity, and peppery profile to remain prominent. The additive-free production means no glycerin, caramel coloring, or sweetener is added to compensate.
