Kujira Ryukyu Whisky is produced by Masahiro Shuzo in Okinawa, Japan, using 100% Indica rice and black Koji — traditional Okinawan fermentation techniques applied to whisky production. Aged in white oak virgin barrels, Oloroso Sherry, and ex-bourbon casks with expressions from NAS through 25 years. The subtropical Okinawan climate accelerates maturation, producing unusually rich, smooth whisky from a rice base unlike any other Japanese distillery.

Koji (Aspergillus) is a mold used in Japanese fermentation to break down starches into fermentable sugars. Black Koji (Aspergillus awamori) is the strain traditionally used in Okinawan awamori — distinct from the yellow Koji used in most sake and Japanese whisky production. Black Koji produces higher levels of citric acid during fermentation, which contributes a cleaner, more mineral character and provides natural protection against unwanted bacteria. Its use in Kujira is a direct continuation of the Ryukyu (Okinawan) distilling heritage applied to whisky production.
Okinawa’s subtropical climate — year-round heat, high humidity, and minimal seasonal temperature variation compared to mainland Japan or Scotland — accelerates the interaction between spirit and oak significantly. The consistent warmth causes faster extraction of wood compounds, producing aged character at a pace closer to tropical rum aging regions than to cooler Japanese or Scottish environments. This is why Kujira can produce mature, complex expressions at younger age statements than many Scottish or mainland Japanese whiskies.
