Cava

Cava is Spain’s traditional method sparkling wine, produced primarily in the Penedès region of Catalonia from indigenous grape varieties — Macabeo, Xarel·lo, and Parellada — using the same méthode champenoise as Champagne. Cava ranges from the approachable Non Vintage Brut through Reserva (15+ months) and Gran Reserva (30+ months) to the prestigious Cava de Paraje Calificado — single-vineyard, minimum 36 months aging.
