Ancho Reyes is a Mexican liqueur from Puebla crafted from the ancho chile — the dried, aged form of the poblano pepper. The original expression uses chiles that have been sun-dried and then cold-macerated in sugar cane spirit, producing a deeply complex, smoky, spicy, and subtly sweet liqueur with dark fruit and chocolate undertones. Ancho Reyes Verde uses fresh green poblano chiles for a brighter, grassier, more citrus-forward profile. Both are essential cocktail ingredients, particularly in Margaritas, Palomas, and spirit-forward stirred cocktails where chili complexity elevates the drink.
