Holyrood Distillery offers last chance to buy whisky casks
Edinburgh-based Holyrood Distillery will put its whisky casks on sale to the public for one final time tomorrow.
From tomorrow (26 June), consumers will be able to buy two whisky casks from the distillery. The recipes will be matured in 250l Refill Sherry casks with both available for £6,000 (US$7,620). Distillery manager Calum Rae specially selected the casks to showcase the full range of the malts used previously at Holyrood. It marks the end of the distillery's cask programme. On creating the recipes, Rae said: “This is the final chance to be part of our cask programme journey. We have created two new recipes to complement our existing portfolio."“Recipe one combines our Golden Promise heritage malt with Highland peated malt. For fermentation, we have used a combination of MG+, our classic distilling yeast, and Tropicale Yeast, a brewing strain.
All of these elements combine to produce a malt-forward spirit, boasting a velvety texture and notes of barbecued pineapple and citrus before finishing with a subtle wisp of smoke.
"Recipe two uses traditional pot still malt in conjunction with two speciality malts: Cara and Chocolate. We have used our staple distilling yeast, MG+, and also one of our favourites, Edinburgh Ale Yeast.
"This is a deliciously sweet and sticky spirit with strong biscuity notes, as well as toffee and caramel with hints of fresh coffee, stone fruit and melon."
The whiskies are the last opportunity for the public to purchase a cask from the distillery. The initial price includes three maturing samples, which can be drawn on request. Last year, Holyrood released its first single malt, Arrival – which is said to be one of the first single malt whiskies produced in Edinburgh in a century. The distillery also recently gained more than £2 million (US$2.5m) in funding so it could support its new fill casks and transport cased goods internationally.
