Dom Pérignon: The Monk, the Myth, the Champagne
The most famous name in Champagne belonged to a Benedictine monk who, contrary to legend, did not invent sparkling wine at all. Dom Pierre Pérignon was a real person, a gifted winemaker whose contributions to Champagne were enormous, but the popular myth and the historical reality are two different and equally interesting stories.
Pierre Pérignon was born in 1638 and became a monk at the Abbey of Hautvillers in the Champagne region of France, where he served as cellar master for decades until his death in 1715. As the monk responsible for the abbey's wines, he devoted his life to improving their quality.
The Myth vs. the Reality
The enduring legend says that Dom Pérignon invented Champagne and, upon first tasting it, exclaimed that he was "drinking the stars." It is a wonderful story, but historians regard it as later marketing rather than fact. Sparkling wine was not a single invention, and bubbles in wine were often considered a flaw at the time. The famous quote appears to have been attributed to him long after his death.
What He Actually Did
Pérignon's real achievements were profound, even without the myth. He pioneered techniques that became foundational to fine Champagne: rigorous grape selection, gentle pressing to keep the juice white even from dark grapes, and the art of blending wines from different vineyards to create a superior and more consistent final product. That practice of blending, or assemblage, remains central to Champagne making today. He worked to reduce the unwanted bubbles, not create them, but his quality methods set the stage for the sparkling wine the region would become famous for.
The Birth of a Prestige Cuvée
The name lived on in spectacular fashion. In the 20th century, the Champagne house Moët & Chandon launched a luxury prestige cuvée named Dom Pérignon in his honor, with its first vintage released in the period between the world wars. It became one of the most prestigious Champagnes in the world, sold only as vintage-dated bottles from the finest years.
