Buffalo Trace creates second Daniel Weller whiskey

Sazerac-owned Buffalo Trace Distillery has released the second edition of its experimental Daniel Weller series, crafted from spelt wheat.

The series, first created in 2023 using Emmer wheat, is a tribute to Daniel Weller, the grandfather of William Larue Weller, an early contributor to the family's Bourbon-making legacy. The collection explores how different wheat varietals influence the flavour profile of Bourbon. Each release is crafted as a focused experiment, encouraging a deeper appreciation for how a single variable can shape the final whiskey. Harlen Wheatley, master distiller at Buffalo Trace Distillery, explained: "Rather than leaning on barrel innovation, we chose to strip the process back and let the wheat speak for itself. "By avoiding specialised barrel treatments and techniques, we were able to focus on how spelt wheat's natural sweetness and distinct character influence the Weller mashbill. Its nuanced profile makes it ideal for experiments where the grain's personality is meant to shine." For the second release, the Buffalo Trace team looked to spelt wheat, known for its subtle sweetness and gentle nuttiness but rarely used in whiskey production. The grain has been cultivated for thousands of years, primarily in Europe, and is closely linked to traditional small-scale farming and artisanal baking. By using spelt instead of rye as the secondary grain, the new release is said to enhance the ‘soft, smooth’ profile characteristic of Weller Bourbons while allowing the unique qualities of spelt to influence the whiskey's aroma, texture, and flavour. Daniel Weller Spelt Wheat was aged for 10 years and is bottled at 47% ABV. The Bourbon presents aromas of nuts and biscuits, complemented by freshly baked cookies, clove, cinnamon, nutmeg, fresh fruit, subtle leather, butterscotch, caramel, vanilla, and oak. On the palate, it reveals flavours of dried fruit, baking spices, and floral notes reminiscent of tea. The second release of Daniel Weller will be available in limited quantities to distributors, select retailers, bars, and restaurants across the US starting in March 2026, with an SRP of US$549.99. A nod to a pioneer Daniel Weller laid the groundwork for Bourbon distilling after settling in Kentucky in 1794. He continued his family's distillation tradition and expanded his influence in the spirits trade by operating and leasing his still. Each release is an opportunity to connect our history to the future of American whiskey." Each release of Daniel Weller is offered in a 750ml glass bottle featuring a unique compass stopper. The coordinates of Daniel Weller’s farm, located near Botland, Kentucky, are inscribed beneath the stopper. Last month, Wheatley and singer-songwriter Chris Stapleton released Traveller Whiskey Full Proof, the brand's first line extension.
