Wild Cenizo Agave. Durango. Ancestral Distillation. Clase Azul — the Durango expression in Clase Azul’s regional mezcal series, produced from wild-harvested Cenizo agave in the rugged highlands of Durango, Mexico using an ancestral distillation process that predates modern mezcal production methods.

The Cenizo agave (Agave durangensis) is native to the Durango and Zacatecas highlands and produces a distinctly different character from the Espadín agave used in most commercial mezcal — earthy, mineral, and more restrained in smoke, with the wild-harvest character that comes from agave grown without cultivation intervention. The ancestral distillation method uses clay pot stills and natural spring water, maintaining the same production philosophy Clase Azul applies across its ultra-premium tequila program.

Like all Clase Azul expressions, the Durango is presented in a hand-painted artisan ceramic decanter — each piece individually painted by artisans in Santa María Canchesda, making every bottle unique.

Frequently Asked Questions

  • How does Cenizo agave differ from Espadín? Cenizo is a wild highland agave producing earthy, mineral character with restrained smoke — distinct from the more widely grown Espadín used in most commercial mezcal.
  • What is ancestral distillation? The most traditional mezcal production method, using clay pot stills rather than copper or stainless, and natural fermentation without commercial yeast — producing mezcal closest to the original pre-industrial distillation technique.
