Woodford Reserve Masters Collection Chocolate Malted Rye — the 15th Masters Collection release: a Kentucky Straight Bourbon where roughly 15% of the mash bill is chocolate-malted rye — rye barley kilned to the precise temperature where its natural sugars caramelize into a concentrated cocoa character rather than burning into smoke, introducing a flavor compound into bourbon production that had never been commercially attempted at this scale.

Toasting grain is a familiar technique in brewing. Toasting it too briefly and nothing interesting happens; too long or too hot and it scorches into smoke. The precise window in between — where the Maillard reaction transforms the grain's sugars and proteins without reaching combustion — produces a chocolate character that is genuinely different from adding chocolate flavoring: it comes from the grain itself, baked into the distillate before the barrel ever touches it.

Master Distiller Chris Morris applied this technique to rye rather than barley, creating a bourbon where the chocolate notes derive from the grain bill rather than the oak. At 70% corn, 15% chocolate malted rye, and 15% malted barley, the resulting spirit went into Woodford's standard new charred American white oak barrels and was bottled at 90.4 proof. The chocolate character in the final whiskey is not a barrel contribution — it is a distillate contribution, tracing back to the original mashing and fermentation of the chocolate-kilned grain.

This expression is also the origin of the Chocolate Whisper lineage: the residual distillate from this production run mingled with a subsequent standard bourbon run, producing the unexpected chocolate character discovered in sensory evaluation that became the 2021 Chocolate Malt Whisper and the 2025 Chocolate Whisper Redux.
