Woodford Reserve Chocolate Malted Rye
There has been distilling on the Woodford Reserve Distillery site for more than 235 years, making it the oldest Bourbon distillery in Kentucky. Now owned by Brown-Forman — one of America’s largest wine and Spirits companies — it has been refitted and set to expand. Since the beginning, the folks at Woodford have been influential in the development and codifying of Bourbon production. In short, they helped invent the Spirit as we know and love it today.
Woodford’s Master’s Reserve Collection is their high-end, limited edition release. Beginning in 2013, each one is an experiment in Whiskey-making… each one is unique… and all Whiskey fans look forward to it with great eagerness. And that tasty tradition extends into 2019 with Woodford Reserve Master’s Collection Chocolate Malted Rye — the fifteenth in the series.
When you toast grains the flavor profile starts to change. The natural sugars AND proteins combine in different ways, developing sweetness and complexity. It’s more than “just” caramelization. Toast the grains too long or too hot and it gets smoky. Toast them just long enough at just the right temperature and it gets chocolaty. That’s what they did here — the mash bill is 70% corn,15% chocolate malted rye, and 15% malted barley. And they bottle it at a near perfect 45.2% ABV.
The art of making fine bourbon first took place on the site of the Woodford Reserve Distillery, a National Historic Landmark, in 1812. It is said that the history of bourbon is the history of Kentucky,
Woodford Reserve is crafted from a grain recipe of 72% corn, 18% rye, and 10% malted barley. The sweetness of the corn combined with the spice of the rye and the nuttiness of malt builds the base for the world’s most flavorful bourbon. The water for Woodford Reserve comes directly from the naturally filtered by limestone deposits under the property. This water, iron-free and mineral rich, is a crucial ingredient in the process. The fermentation process is among the longest in the industry. The extra time, paired with its unique yeast strain, creates a great “depth of character and a complex range of flavors.” Woodford Reserve creates a perfectly balanced flavor by careful batching whiskey distilled in pot stills and whiskey distilled in column stills. It is matured in new, charred, white oak barrels made at Woodford Reserve. After filling, barrels age in unique heat-cycled warehouses until mature.

Sustainability is one of the main visions for Woodford Reserve. 98% of waste material is recycled across all operations; ten acres of land on the Woodford Reserve property is dedicated to native grass restoration; 95T of food scraps are composted on the Woodford Reserve property.
Woodford Distillery’s smooth and supple bourbon has become the official bourbon of the Kentucky Derby.
