Area of Production: Designated vineyards in the DOC area Soil: Alkaline sandstone with a fair amount of stone.Grape Variety: 87% Glera 13% Pinot Nero (fermented on the skins)Production Techniques: After soft pressing of the grapes, vinification takes place in temperature-controlled stainless-steel tanks and with the use of selected yeasts. During the subsequent second fermentation, Saccharose and selected yeasts are added to this blend. The product undergoes a slow "second fermentation" which results in a very fine and persistent perlage. After approximately 30 days, when the residual sugar content is 12 g / I, refermentation is stopped by bringing the temperature to 32 b0F. The product is then kept at "rest" on the yeasts for another month, and these are then separated by the wine with "tangential" filtration. The sparkling wine is then stored at 28.4 b0F and ready to be bottled in white glass to highlight the particular "Provencal pink" nuance of this delightful sparkling wineTasting Notes: Appearance: Light pink with typical copper hues Bouquet: Hints of white flowers from Glera variety with violet and raspberry notes from Pinot Nero Taste: Full bodied, with a clearly perceivable aftertaste of berries Serving Suggestions: Ideal ad a aperitif, it also pairs beautifully with and first course. Serve chilled at 42-46 ?F
The roots of Cantine Maschio's passion for wine are as old as the vines on the Veneto's hills. The story began in 1973, when Bonaventura Maschio turned his family's century-old distillery into a winery that even then was state-of-the-art in terms of its technology and production methods. It now produces the two biggest-selling wines in Italy, Maschio Chardonnay and Maschio Pinot Rosa. The wines produced by Cantine Maschio come from grapes grown on the hills of Valdobbiadene and Conegliano and in the Piave Valley. This is the land of Prosecco, an area that extends from the rugged beauty of the Dolomites to the refined elegance of Venice, where vines have been cultivated for more than 3,000 years. The history of Cantine Maschio is also the history of Prosecco, a wine which, with its fresh, light and lively style, has created a new type of drinking geared towards conviviality, the aperitif and the cocktail known as a "spritz".The Venetian tradition of the ombra (a glass of wine drunk with friends at the osteria), has become a passion that has won over the most discriminating and enthusiastic of consumers.
