Three Wrens Distillery diversifies into rum

UK-based distillery Three Wrens has created what it claims is the ‘world’s first’ bison grass-infused rum.

The rum is distilled with five botanicals, including raw cacao, before being infused with bison grass, tonka beans, vanilla pods and cinnamon. The bison grass, which is also used to flavour one of the company’s acclaimed gins, is grown organically at the distillery in Cheshire, England. “We’ve distilled gin for several years now, and we do it very well,” said owner Nick Wadeson. “The support of local businesses and the general public has been phenomenal ever since launching, and we always want to give our customers more. “Flavoured rum was the next logical step for us. It’s been growing in popularity in both households and bars and restaurants in recent years, and we know we can create amazing flavours here at our distillery that everybody is going to fall in love with.” The rum offers notes of coumarin paired with the 'rounded flavour profile' of the molasses-based spirit. The small batch expression takes ‘several weeks to produce’, and the process includes a two-week period of maceration. The spirit is filtered and bottled in a matte gold bottle at 40% ABV. Wadeson is said to have designed the spirit specifically to shine in cocktails such as the Frisky Daiquiri, an apéritif shaken with rum, fresh lime, cloudy apple juice and sugar. To celebrate the launch, Three Wrens Distillery will host a cocktail party on Monday 29 August from 12pm-6pm BST. The party will showcase the new rum with a specially designed menu of eight signature cocktails for guests to purchase from the bar. Entrance to the party is free, and complimentary themed canapés will be served throughout the day. The event is for over-18s only. This new expression is available to trade customers directly through the distillery and also via Hammonds of Knutsford. It is also available via the Three Wrens website where it is on sale for an introductory price of £35 (US$41.37), and currently includes a free mini gin.
