Cocchi creates vermouth with The Savoy

The third edition of Cocchi Savoy Dry Vermouth di Torino is now available across all bars at The Savoy hotel in London.

Created in partnership with bar manager Andrea di Chiara and head bartender of the American Bar, Angelo Sparvoli, the new vermouth boasts a pronounced mineral character and is described as ideal for contemporary mixology. The new expression follows two previous iterations, the first of which was created in 2014, when Giulio Cocchi collaborated with the head bartender of the American Bar at the time, Erik Lorincz, and former bar manager Declan McGurk, to create a unique product intertwining Italian winemaking and botanical expertise with the mixing knowledge of the Savoy’s bar team. This was followed by a second ‘refined’ version, developed with the contributions of Maxim Schulte of the American Bar and Elon Soddu of the Beaufort Bar during technical and sensory tasting sessions held at Cocchi’s winery in Cocconato and in their bars in London. The aim was to make a perfect vermouth to be used in Martinis. Giorgio Bava, Cocchi’s export manager for the UK, commented: “We’re delighted to introduce the latest edition of Cocchi Savoy Dry Vermouth di Torino – a collaboration that has been ongoing for more than a decade. “It combines Cocchi’s artisanal know-how with The Savoy bar team’s vision. This enables us to present a unique vermouth crafted for the finest cocktails while maintaining the elegance of enjoying it neat.” Cocchi Savoy Dry Vermouth di Torino is said to be as ‘distinguished as a Vermouth di Torino Superiore’, featuring more than 50% Piedmontese wine, including Chardonnay from calcareous soils in Monferrato and Cortese, known for its freshness and acidity. It has been crafted with ‘carefully selected’ primary botanicals, including citron and mandarin, which deliver lively citrus notes; sage and galangal, for aromatic complexity; and wormwood, mint, gentian, bergamot and rhubarb, which balance the aromatic profile in continuity with the first two editions. It is bottled at 17% ABV, and is said to stand apart from Cocchi’s traditional Extra Dry on account of its ‘bold personality’. Only 2,000 bottles of the Cocchi Savoy Dry Vermouth di Torino have been created, joining Cocchi’s collection of limited edition products.
