Botivo ages apéritif in Islay casks

London-based wine and spirits merchant Berry Bros & Rudd and apéritif-inspired Botivo have joined forces to create the ‘world’s first’ barrel-aged aperitivo.

The 1% ABV limited edition aperitivo has been crafted using ‘the highest quality botanicals’ and an aged British apple cider vinegar, and has been matured for three years in whisky casks from Islay. The result is a liquid described as ‘complex and refreshing’, which is said to marry the woody notes of the barrel and cherry bark with the smoky tones of peat and bittersweet flavours of gentian and wildflower honey. Sam Paget Steavenson, co-founder and maker of Botivo, said: "We could not be more excited to partner with Berry Bros for our first Botivo aged limited edition. “We consider this a world first product, ageing our British apple cider vinegar for three years in whisky barrels to take flavour and craft in the no-and-low space to the next level." Robert Whitehead, spirits buyer at Berry Bros & Rudd, added: “It was a delight to spend a day with Imme [Ermgassen] and Sam at Botivo HQ in rural Hertfordshire, melding our combined love of innovative aperitivos and traditional whisky barrels into a fascinating new collaboration in the no/low arena. “Utilising the best of what we know and embracing the knowledge of new voices allows us to continue exploring the paramount question – is it good to drink?” The limited edition aperitivo is recommended served as a Highball with soda and a slice of fresh lemon. This collaboration bottle will be available for purchase from 3 January from Botivo and Berry Bros & Rudd’s online stores. Only 600 bottles have been produced, and they are priced at £38 (US$48). Each bottle can produce 20 serves. Botivo's brand ethos is centred on small batch production, using no flavourings or preservatives. Last summer, co-founder Imme Ermgassen told The Spirits Business why the brand isn’t about moderation, and shared where she thinks the no-and-low category is heading. In 2023, Botivo unveiled a ‘disruptive’ redesign to highlight the craft credentials of its non-alcoholic ‘spirit’.
