Description
This Cabernet Sauvignon was sourced from two vineyards, Star Vineyard in Rutherford, and an undisclosed vineyard in the hills of South Napa. The fruit was cold soaked for 3 days and spent up to 21 days on the skins before being pressed to 30% new French oak. In barrel, Star Vineyard exuded a mix of dark berries, leather, baking spices, and silky tannins. The South Napa site had more chocolate-covered coffee beans and tobacco with structured tannins and bright acidity. Each lot was aged separately for 17 months with just one racking before being married together for bottling.
