Like each previous edition, this 12-year-old bourbon is non-chill-filtered, and uncut to preserve all the natural esters and taste components from the barrel to the bottle. This creates variance in proof from batch to batch, an exercise for whiskey fans.
Elijah Craig Barrel Proof B521 offers the chance to taste the lowest proof yet in the series. The first batch from this year, A121, was 123.6 proof.
